Amazingly, the Caribbean natives known as the TaÃno were among the very first to introduce the Spanish shipping traders to the word barbecue. In their native language, the word Barabicu literally means meat that is raised onto an elevated grate made of wood. This is typically a frame made of sticks that have meat attached to it. This frame is placed next to a small fire that allows the smoke to reach the meat. The Spanish then used the word Barbacoa. After this, the Spanish began to share this information with Spain and for the most part, the rest of the world. Had it not been for the piracy of barbecue by the Spanish, this cooking style may not have otherwise been popularized until much later. That’s why I chose the name PRBQ. To give the TaÃno due credit.

A FEW RECIPES TO USE YOUR PRBQ SEASONING.
Toaster Oven Chicken, fast mashed potatoes, & frozen vegetable. Fast Meal: 15-25 minutes
This is one for those who forgot to cook something and it’s getting past dinner time too fast. Using microwave, toaster oven or frying pan, and medium saucepan. Ingredients: chicken, PRBQ seasoning, olive oil, potatoes, milk, butter, salt & pepper, frozen vegetable of some sort. (optional: lemon juice, lime juice, or vinegar)
1. Pat chicken dry with paper towel & cut chicken into bite-size chunks. Rub PRBQ seasoning on your chicken. Apply liberally, covering the surface completely. (For no mess, put seasoning in a baggie, drop chunks in & shake). Put on a foil lined baking sheet for toaster oven.
2. Start your fast mashed. Using 1 potato per person (depending on size of potato and size of their hunger). Peel or don’t peel your potato. Cover your potato fully in very wet paper towels. Place in a bowl & microwave for 3-5 minutes. (Know the power of your microwave and the size of the potatoes. Might be a bit less than 5 minutes). If multiple potatoes make sure they are all wet with paper towels the whole cook time. Poke with fork to measure softness. Repeat until soft.
3. Finish the chicken. Once the potatoes are soft, allow them to cool down in microwave while you drizzle the chicken with olive oil and lemon juice, or lime juice or mix oil with a tiny bit of vinegar and drizzle. Bake the chicken in the toaster oven for 12-15 minutes at 350°. Make sure your chicken is cooked through.
4. While chicken cooks, take out the potatoes. Now that they are soft you have another opportunity to peel them if you choose. Now put the potatoes into a saucepan and mash them with butter and milk. Add both slowly and taste to get them right. They will need salt and pepper even if you’re boring. (Hot sauce, if you’re a boss).
5. Make yourself some frozen veggies, and finish the dish. Your chicken should be done, your mashed should be near perfect. Now get something green on your plate. Take out a bag of some frozen vegetable like broccoli, mixed vegetables, onions and peppers, or corn. Put in a glass bowl with 2 spoonfuls of water. Cover and microwave for 1 minute. Season with salt and pepper or butter or a little lemon juice.
Put it all together: Chicken, potatoes & vegetable on a plate and enjoy! Maybe with some bbq sauce or hot sauce, you got this.
